The Khovel Rishon (Chief Mate) has a white background. Isn't that color usually reserved for supply officers?

Well. Usually - yes.
However, the site where I have found these illustrations doesn't give any explanations. According to it there are only two categories of officers serving at the ZIM vessels: mates and engineers. The ordinary seamen (stewards, cooks, etc, even boatswain) have no insignia of ranks.
I asked some people who understand the issue. They have told me, this is probably an obsolete shoulder board, that is not in use any more.
